Panikeke Recipe
Audience: People that are learning how to cook Samoan food
Purpose: To instruct
Ingredients
- 1/3 cup and 1 tablespoon and 2 teaspoons all-purpose flour.
- 2 tablespoons and teaspoons white sugar
- 2 teaspoons baking powder
- 2 very ripe bananas
- 1 tablespoon vanilla extract
- 3 tablespoons of water
- 3/4 cup vegetable oil for frying
Directions
Step 1: Combine the flour, Sugar, and baking powder in a bowl until thoroughly mixed, and water to make a smooth, sticky dough.
Step 2: Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees). After you heat up your deep-fryer or large saucepan put oil in , the oil should be at least 3 inches deep to cover the panikekes.
Step 3: Scoop up a scant 1/4 cup of batter with a large spoon and use another spoon to push it off into the oil. Fry in small batches of 4 or 5 until they float to the top and turn golden brown, about 3 minutes, then flip them to the other side. Remove the fryer or saucepan and let them drain on a paper towels. Then put you topping of choice on them and they are ready to eat.
